Will my power inverter be able to run my projector?

theoretically, yes ... your wattage does not exceed 500 watts so obviously you should be fine ... be sure to NOT turn the vehicle off while your projector or other items are running for an extended period of time or you will surely be buying a new battery or an alternator ... or both :/ ... trust me i know from experience ... also if ur inverter has an on/off switch do not forget to turn the switch off before you leave your vehicle because its just like leaving your car lights on. also for future reference if you cant find the wattage of an item just remember that voltage x amps = wattage ... example: playstation 3: 120V and 3Amps ... = 360 watts
