Are my grad school/career plans realistic? Or should I change my focus?

Actually, within the next 10 years there's going to be a high demand for those with degrees in school psych. Many of the counselors/psychs in school will be retiring and since many individuals look to the big fields in psych (clinical, forensic) to earn their degree, your chances of getting a job in this field will be pretty good. In the next couple of years or so, there will probably be a big push for school psych programs so enrollment will go up and then subsequent jobs will be less and less. . . . . . . just like we've seen with the medical field (nurses, med assistants, CNAs) in the past 10 years. Many people are jumping on that wagon now since the "need is so great," but with so many students looking to the med field, they are having a hard time finding a job after graduation.
